Tomato
Sauce Recipe
Easy
Fresh and Tasty
Make your own best fresh tomato
sauce recipe and use it for all sorts of things. Its great with pasta,
or as a pizza topping. Add your favourite fish, meat or grilled
vegetables to make a great provencal style dish.
Or just serve it as an accompaniment with grilled/barbecued food. Its
really so versatile.
Use it as part of your Mediterranean
diet...a really delicious and
healthy sauce.
Ingredients to make 1 Quart Approx.
- 1
Kilo/2.2lbs. of fresh
Mediterranean tomatoes
chopped, or 2 Sixteen ounce
cans of whole plum
tomatoes in juice
- 1 Large onion -
chopped
- 6 Cloves of
garlic - chopped
- 1 Lemon
- juice of
- 1 pint of good vegetable stock or 1 vegetable
stock cube dissolved in a pint of water.
- A bunch of fresh basil leaves or 1 tablespoon
good quality
dried basil
- 2 Tablespoons
fresh parsley
- 1 box of Spanish Tomate Frito(400g) or 3
Tablespoons
double
concentrate tomato puree
- 3 Tablespoons
extra virgin
olive oil
- 3 Bay
leaves
- Salt and freshly
ground black pepper to taste

Method
- OK
- First fry off your onion in a medium
saucepan with
the olive oil, over a medium heat until soft.
- Then - reduce the heat and add the garlic.
- Cook for a further five minutes stirring.
- Add the chopped fresh tomatoes to the mix - or:
- Open the cans of tomatoes and pour the juice
into your mixture.
- Roughly chop the tomatoes in the can with a
sharp knife.
- Now add them to the pan.
- Add the rest of the ingredients and cook at a
simmer for 30 minutes, stirring occasionally.
- Take out the bay leaves and discard.
- Next we need to blend
the cooked tomato mixture into a sauce. It's really easy with a stick
blender
as you can do this in the pan. Or you can use a food
processor....either way
whizz it until it is almost but not quite
smooth. It's good to leave some texture in it.

that you can use now or freeze for later. You'll never buy it again!
