Marmalade and Strawberry Jam

There is just so
much
growing in the hills
behind Malaga in the south of Spain, that Pam has just had to
develop these preserves and jams to help us deal with the
super-abundance of Lemons, Oranges, Olives, Peaches and Avocados, to
name but a few.
We have lived and worked around the
Mediterranean for more than thirty years now, but even we were amazed
when we lived in Periana in the Axarquia, the Eastern part of
the Costa del Sol. The quality and quantity of fresh vegetables, fruit,
nuts, meat and fish was just astounding.
These days, back on the coast, we have a huge choice of markets to
visit, where we can buy the most amazing, freshest, best quality
produce.
The first thing we did was to harvest some of the Lemons from our Lemon
tree in the garden. With the addition of some of our own Kumquats - Pam
made some delicious Marmalade.

The
next thing that happened was that some Spanish
friends
dropped us in a massive box of fresh Strawberries. So it was quickly
back to work for Pam.
