Tomato Salsa Recipe
The
Mediterranean Spicy - No-Cook Sauce
This Mediterranean tomato salsa
recipe makes
a fresh, spicy sauce that can be used
for almost anything. It's great with grilled and BBQ'd meats,
chicken and
fish. A couple of spoonfulls make an excellent salad dressing for a
crispy, fresh, green salad on a warm summer's day. It'll spice up any
soup and also compliments deep fried vegetables such as
battered
aubergines or brocolli. A great standby! Why not make
some now and keep it in the fridge.

Ingredients
- Two large beef tomatoes
- Two cloves of Garlic
- A one inch piece of fresh ginger
- Juice and zest of one small lemon
- A handfull of parsley and one of coriander
- Two tablespoons of extra virgin olive
oil
- One tablespoon of balsamic vinegar
- Two dried cayenne peppers or chillies
- Salt to taste

Method
- OK - First chop the tomatoes, parsley and
coriander as finely as you
can by hand.
- Grate the ginger.
- Bash the chillies in a pestle and mortar.
- Now combine all the ingredients.
- Whizz up half the mixture with a stick blender
or in a food processor.
- Combine again and there you have it... a great
Mediterranean tomato salsa.
