French Onion Soup Recipe
Here's a quick and
easy onion soup recipe. You can make it in about thirty minutes from
scratch and it really is fantastic - full of flavour and heartily
healthy.
We use our own wholemeal bread but the original used stale white French
bread to use it up mainly.
There's nothing better to warm you up on a cool winter's evening.
Why not include it in your own Mediterranean diet. It's healthy and
full of goodness.
Eat well - feel full and satisfied and lose those excess pounds without
undue effort.

Soup Recipe Ingredients for Four People
- Two large onions finely sliced.
- 2 cups/250ml vegetable or beef stock - or use a
good quality stock cube.
- 1 tsp. of brown sugar.
- 1 glass - 125ml of red wine.
- 1 measure of brandy (to flambé).
- 1 tsp. of herbes de Provence.
- 4 slices of stale bread.
- 4ozs/100g. of strong cheese - grated
- 1 oz/25g. of Parmesan - grated
- 1 tbls. of plain flour
- 2 tbls. of Olive oil.
- 1 oz./25g. of butter.
- Salt and pepper.

step-by-step instructions
Onion Soup Recipe Method
- Heat the oil and butter in a pan and add the
onions and sugar.
- Cook on a medium heat until the onions are
golden brown.
- Pour in the brandy and flambé, stirring until
the flames go out.
- Add the plain flour and herbes de Provence and
stir well.
- Now add the stock and the red wine - bit-by
-bit,
stirring as you go.
- OK - check for seasoning and let it cook for
about twenty minutes,
adding a little water if it becomes too thick.
- Ladel the soup into onion soup bowls.
- Place your rounds of stale bread on top.
- Then the strong cheese.
- And finally the Parmesan.
- Pop the bowls under a hot grill and grill until
the cheese is all melted and crunchy on top.
- Serve immediately - and enjoy.
