Montaditos

Montaditos
are any tapa "mounted" on a piece of bread or in a tiny sandwich. There
are hundreds of different ones and we're going to show you our own
favorite:
Louis
Armstrong Toast
Legend has it that it was invented by the chef of the famous "Grill
Room"
restaurant in the
Los Monteros hotel near Marbella on Spain's Costa del Sol.
The great
Sachmo, Louis Armstrong, was feeling peckish in the middle of the
afternoon (as you do!)
and asked for a snack to keep the hunger pangs at bay.
This is what the chef came up with, and Louis loved it, and became his
favourite snack. It's has been on the menu ever
since. With so few ingredients this is one montadito that's quick and
easy to make and absolutely delicious.
You can also serve it as a simple starter...it always goes down well!
Eat well - feel full and satisfied and lose those excess pounds without
undue effort.

- 2 Slices of wholemeal bread, toasted and
buttered
- Enough sliced smoked salmon (or gravadlax) to
generously cover the toast
- Enough sliced manchego cheese to completely
cover the salmon

Recipe Method
Ok this is dead easy!
- Put the toast on to a baking tray or grill pan.
- Neatly arrange the salmon on top of the
toast....don't be mean...make it at least three slices thick.
- Arrange plenty of sliced cheese on top of the
salmon, making sure the salmon is completely covered.
- Place under a hot grill until the cheese has
melted and is golden brown-
- Arrange on a plate with dressed salad leaves
and serve immediately.
We also make different versions of this recipe replacing the salmon
with chorizo (see below), or tuna, or crispy bacon, or sliced chicken
breast, of ham. Its easy to use your imagination and create your very
own.
