Italian Minestrone Soup Recipe

Minestrone soup recipe is one of the great World classics.
Packed with the goodness of fresh vegetables, beans and pasta, it makes
a wonderful winter warmer.
There are many variations and in this version we concentrate on ease of
preperation and simplicity.
If you like vegetarian recipes then this is for you - being meat eaters
we like to add some chopped Italian sausage or Spanish chorizo - but
it's just as good without any meat at all.
Why not include it in your own Mediterranean diet. It's healthy and
full of goodness.

undue effort.

Soup Recipe Ingredients for Four People
- One large onion finely chopped.
- 4 cups/500ml. vegetable or beef stock
- or use a
good quality stock cube.
- 4 Cloves of garlic - crushed.
- 4 ozs./100g. of carrot chopped.
- 4 ozs./100g. of red bell pepper chopped.
- 4 ozs./100g. of celery chopped - with
the leaves chopped seperately.
- A 16 oz. can of chopped tomatoes.
- A 16 oz. can of white beans.
- 4 ozs./100g. of fresh spinach - chopped.
- 4 ozs./100g. of multi coloured pasta.
- 2 oz/50g. of Parmesan - grated
- 2 tbls. of Olive oil.
- A Bunch of parsley - chopped
- 1 tsp. of dried oregano.
- Salt and pepper.
- For the meat eaters - 4 ozs./100g. of salami
or chorizo. finely sliced

Minestrone
Soup Recipe Method
- Heat the oil in a pan and add the
onions, carrot, red pepper and celery.
- Sweat for ten minutes until soft.
- Add the garlic and cook on low for two more
minutes.
- Now add the stock and tomatoes and cook for
ten minutes.
- Then the pasta, cooking for a further fifteen
minutes.
- OK - check for seasoning and add the beans,
parsley, celery leaves, spinach and the meat if using.
- Bring back to the boil and stir for two minutes.
- We always serve this soup in a big tureen
(everybody always want seconds)
with crusty
bread and plenty of freshly grated parmesan on the
side.
