Super
Healthy Chicken Recipe
If you're looking
for a healthy chicken recipe that's easy to prepare and tastes superb -
then look no further.
We take a whole chicken and skin it (the skin is the fattiest and least
healthy part).
Then, for flavour, we marinate the bird in a mixture of warm aromatic
spices, honey and lemon and lime juice.
With onion, garlic and loads of healthy spinach, it goes in a hot oven
for 1 hour.
Fantastic tastes and health giving spices,
such as turmeric, cinammon and star anise, combine to make a real
winner!
Pam's Top Tip - For best results, use a Moroccan tagine.
This

Marinate your
Chicken and transfer it to a Tagine or seal in foil in a roasting tin
Healthy
Chicken Recipe Ingredients
- One whole chicken about 1.5k/3.5lb. - skinned.
- One onion - roughly chopped.
- 350g./12ozs. of baby spinach leaves - chopped.
- A dozen button mushrooms.
- Olive oil.
- A handful of fresh coriander leaves - chopped.
- A 125g./4oz. tub of low fat natural yogurt.
For
the Marinade
- A 2"/5cm. piece of root ginger - grated.
- 4 Cloves of garlic - finely chopped.
- 2 Pieces of star anise, a 2"/5cm stick of
cinammon, 2heaped tsps. of cumin Seeds, 1tsp black peppercorns and
1-1/2 tsps. of salt - all ground together in a pestle and mortar or (we
use a coffee grinder).
- Juice of a plump lime and half a large lemon.

Healthy Chicken Recipe Method
- First skin
your chicken.
- Make a cut
along the top where the breasts join.
- Peel back the
skin - using a sharp knife to gently cut through any awkward bits.
- Now cut
through the flesh all over the bird especially the legs, to allow the
marinade to get right into the meat.
- Rub the
marinade well into the bird all over and place in a large glass bowl
covered in film to marinate in the fridge for two or three hours or,
preferably overnight.
- Soften the
onions in some olive oil.
- Add the
spinach and stir until wilted.
- Now place the
mixture in the bottom of a tajine with the mushrooms.
- Make sure you
get all the marinade in there.
- Put the lid on
the tajine and cook in a hot oven 200ºc./400ºf. for one hour and
fifteen minutes.
- Remove and
sprinkle with the chopped coriander.
- Serve with our
Mediterranean
roast potatoes.
