Chickpea Salad Recipe
A spicy, healthy,
quick and easy chickpea salad recipe. You don't need to cook anything
to make a delicious and nutritious feast. We blackened and cooked the
peppers ourselves but you can buy them ready roasted in any good food
shop or store.
Chickpeas - Garbanzos are a great source of fiber and protein. They're
quite bland in character and so lend themselves very nicely
to taking on other stronger flavours, such as spices and citrus juices.
This salad makes a refreshing lunch on a summer's day and is quite
hearty enough to eat as a winter salad.
A great Mediterranean
Diet treat.
Eat well - feel full and satisfied and lose those excess pounds without
undue effort.

Ingredients
for Two People
- 1 1lb./450g. Jar of
Chickpeas/Garbanzos -drained.
- 1 4oz./100g. can of roasted red peppers.
- 12 Black olives - pitted.
- 2 tsps. Of capers.
- 1 Handful of fresh coriander chopped.
- 4 Tblsps. of vinaigrette dressing. Make our
version or buy it in.
- One level tsp. of ground cumin.
- One level tsp. of ground cinammon.
- One level tsp. of ground coriander.
- A tsp. of dried mint.
- A dried chilli crumbled.
- Salt and black pepper to taste.

Chickpea
Salad Recipe Method
- Right - this is really easy.
- Put your chickpeas in a salad bowl and roughly
squash few of them with a fork - it helps them to absorb the
flavours.
- Roughly chop the red peppers and add them to
the bowl with the capers, olives and 3/4 of the chopped coriander.
- Whisk the spices into your vinaigrette and add to the bowl.
- Mix well and sprinkle with the rest of the
coriander.
- Serve it on it's own for vegetarian delight or
add canned tuna or even grilled chicken.
